Pandan Coconut Pancakes
Light and fluffy with tender centers and golden edges, these pandan coconut pancakes carry gentle coconut sweetness and a subtle floral aroma. A comforting, nostalgic flavor made for slow mornings and shared moments.
Ingredients:
1¼ cups water
1 egg (or egg substitute of choice)
2 tbsp neutral oil (such as canola or vegetable)
Instructions:
In a large mixing bowl, whisk together water, egg, and oil.
Add pancake mix and whisk until the batter is smooth and well combined. Let rest for 2–3 minutes.
Heat a nonstick pan or griddle over medium heat and lightly grease if needed.
Pour about 1/4 cup of batter onto the pan for each pancake.
Cook until bubbles form on the surface and the edges begin to set, about 1–2 minutes. Flip and cook for another 1–2 minutes, until golden brown and cooked through.
Serve warm and enjoy!
